Baking banana bread

We had some fair too ripe bananas in the mustard household yesterday, so banana bread seemed the ideal solution.

It’s an incredibly simple recipe, just combine all the ingredients (4 tablespoons of butter, 1 cup of sugar, 1 egg, 1 1/2 cups of self-raising flour, 2 mashed bananas, 100ml of milk, 2 tablespoons of custard powder and 1 tablespoon of wattleseed) and bake for 40 minutes.

I actually had 4 bananas, so made twice the quantity. Being an Australian recipe (I love an excuse to flaunt my fake heritage) I substituted wattleseed with poppy seeds, but they work just as well.

Fruit into cake. It’s practically a health food.

One of your five a day. I should know, I’m a medical student (and not at all biased towards baked goods…)
